
Fried eggs are probably one of the most convenient and satisfying options for breakfast or lunch, but this version takes it up a notch with a gourmet twist. Ingredients for one sunny side up
- organic egg
- 20 g good blue cheese that is more on the harder side
- drizzle of olive oil
- pepper
- coarse sea salt

Recipe
- Preheat a pan over medium-low heat. Once it’s hot, add a small drizzle of olive oil and spread it evenly.
- Carefully crack the egg into the pan and very lightly sprinkle sea salt over the egg white.
- Allow the egg white to cook until opaque, which should take about 1-2 minutes. Then, crumble the blue cheese over the egg white and cover the pan with a lid. At this point, you can turn off the heat, leaving the pan covered, as the residual heat in the pan will be enough to cook the egg to perfection and nicely melt the cheese beautifully.
- Let the egg sit for 2-3 minutes. After that, the egg white should be fully cooked and the blue cheese melted and creamy, while the yolk remains delightfully soft and runny.
- Carefully lift the egg from the pan and season it with a pinch of sea salt and freshly ground pepper.
- Serve it with crusty sourdough or baguette, and a side of something fresh like a crisp salad or fruit for a balanced meal.
