Tomato Chicken Pasta

Ingredients

  • 400 g chicken breast
  • 500 g cherry tomatoes
  • 360 g pasta (such as fusilli, penne, or spaghetti)
  • 1-2 tbsp olive oil
  • 2-3 garlic cloves
  • 1/4-1/2 tsp chili flakes
  • 1/2 tsp dried thyme or rosemary
  • Salt
  • Pepper
  • To serve (optional): Parmesan, basil leaves

Recipe

I. Prepare the ingredients

  • Take the chicken out of the fridge for about 20-30 minutes, so it can reach room temperature. Cut it into small pieces.
  • Wash the tomatoes and cut them in halves. Peel and crush the garlic cloves.
  • Generously season the chicken with salt, pepper, and optionally chili – use 1/4 tsp for a mild kick or 1/2 tsp for noticeable heat.

II. Cook pasta, chicken, and tomato sauce

  • In a large pot, bring water to a boil and add a teaspoon of salt. Cook the pasta al dente according to package instructions and drain it well, reserving some of the pasta water.
  • Meanwhile, preheat a skillet over medium-high heat and add the olive oil and the seasoned chicken.
  • Sear the chicken for about 5 minutes or until brown on the outside, stirring occasionally. Turn down the heat to medium and continue cooking the chicken for 3-5 more minutes, or until fully cooked but still juicy. Remove the chicken from the pan and set it aside.
  • Into the same pan, add the garlic and the halved tomatoes along with the thyme or rosemary, a pinch of salt, and a few grinds of pepper.
  • Cook over medium heat until the tomatoes have softened and the garlic is fragrant, then add some of the reserved pasta water. Start with 100 ml and gradually add more if needed for the desired consistency.
  • Let it simmer for 5-10 minutes, adding more pasta water as needed, until a sauce forms. Turn off the heat.
  • Add the chicken and drained pasta, stirring until well coated in the sauce.
  • Adjust seasoning to taste.

III. Serve

  • Drizzle the pasta with a little olive oil for extra richness if desired, then serve it warm with grated Parmesan and optionally fresh basil.
