White Chocolate Matcha Mousse – High Protein & Easy

I used to drink matcha all the time – and I really mean all the time. Somehow, I haven’t had it in a while, so when I had it again it felt really nostalgic and I remembered how much I loved it with something sweet. And that’s how I came to try it in a white chocolate mousse.

This dreamy dessert is creamy, delicious, and packed with protein – over 20 g per serving! It’s incredibly easy to make and strikes the perfect balance: rich and satisfying, yet lighter than your typical mousse.

Greek yogurt or Skyr makes it wonderfully creamy, while white chocolate brings a touch of sweet indulgence. The matcha brings a delicate bitterness that pairs beautifully with raspberries or strawberries for a burst of fruity contrast.

Ingredients for 4

  • 800 g high-protein Greek Yogurt or Skyr
  • 200 g white chocolate, chopped roughly
  • 4 tsp matcha powder (or more or less, depending on preference)
  • A pinch of salt
  • To serve: fresh or frozen raspberries or strawberries

Recipe

  1. Melt the chocolate: Fill a small saucepan with a bit of water and bring it to a gentle simmer. Place the chopped chocolate in a heatproof bowl and set it over the pan, making sure the bottom of the bowl doesn’t touch the water. Stir occasionally until the chocolate is fully melted and smooth.
  2. Combine: Place the Greek yogurt or Skyr in a large bowl. Gradually whisk in the melted chocolate, working quickly so it doesn’t set or seize. Add a pinch of salt to enhance the flavor.
  3. Add matcha: Sift in the matcha powder (to avoid lumps) and whisk until fully combined. Adjust the amount, depending on how intense you like the matcha flavor.
  4. Assemble: Spoon the mousse into 4 serving bowls or glasses. Add a layer of fresh or frozen berries, if desired.
  5. Chill: Refrigerate for at least 10–15 minutes to allow the mousse to firm up slightly.
  6. Serve: Top with more berries, a dusting of matcha powder, and a few shavings or curls of white chocolate if you like.

Notes:

  • Use sugar-free white chocolate if you’d like to reduce the sugar content.
  • For a vegan version, use dairy-free white chocolate and swap the Greek yogurt or Skyr for a plant-based alternative. The protein content may be a bit lower, but it will still be higher than in a traditional mousse.
